1 kg green nuts
2 kg old
500 ml of water
2-3 sachets of vanilla sugar
Method of preparation
The green walnuts (chosen when they are suitable for size, not very large) are cleaned with a knife and kept in water with a little salt and lemon juice for two days. Cover the bowl with a lid and change the water from time to time.
After they have been macerated enough, they start to prepare the syrup. Mix the sugar with water, lemon, vanilla sugar and put them on fire. After they start to boil, add the walnuts, after you drain them and wash them with a jet of water.
The mixture is allowed to boil for about three hours, over medium heat.
It is kept in glass jars with hermetic closure. It is stored in a cool place.
For a more fragrant taste, you can add a tip of cinnamon in syrup.
